Brussel Sprout Pizza with Pancetta, Goat Cheese and Balsamic Glaze
This Brussel sprout pizza is a combination of salty, crispy pancetta cubes, creamy goat cheese, savory Brussel sprouts, with a drizzle of tangy, sweet balsamic glaze - which makes for an absolute explosion of flavors. Great as a nutritious weeknight side dish, or appetizer for entertaining!

Ingredients
3cupsBrussel sprouts, thinly sliced or shaved
2cupsshredded mozzarella cheese, or sliced fresh mozzarella
3tablespoonsgarlic sauce or spread
1cupgoat cheese, crumbled
4ouncespancetta, cubed
1thinpizza crust or flatbread

Instructions
Heat a pan to medium heat on the stove. Once the pan is hot, spray with avocado spray and add pancetta.
While the pancetta is cooking, thinly slice Brussel sprouts into small pieces using a sharp knife or mandolin.Or: buy already shaved brussel sprouts.
Pre-heat the oven to 400 degrees F, or per package directions for the pizza dough.
Remove the pancetta and set aside. Using the same pan, cook the Brussel sprouts for 4-5 minutes - depending on how thinly they are chopped. Cook in the fat of the pancetta, or remove and use olive oil per your preference. Season with salt, pepper, and garlic powder to taste.
Stretch out pizza dough onto a cooking-spray coated baking sheet or pizza stone. Using a spoon, spread a small layer of garlic sauce onto the pizza dough.
Top with a light layer of mozzarella cheese, then crumbled goat cheese - spreading evenly throughout the pizza.Evenly distribute the pancetta. Then top with Brussel sprouts. Place in the oven, and set timer.
Take the pizza out of the oven, and drizzle with a balsamic glaze. You might want to leave the glaze out in case people want to add more! Optional: top with hot honey or red pepper flakes for some spice!
