Easy One-Pot Mexican Chili

A quick, easy, yet delicious meal that's perfect for a lazy Sunday or busy weeknight! Ideal for the fall and winter months (but we eat this all year) - it's comfort in a bowl. If you're a busy mom who just wants a more relaxing day give this recipe a try!

Ingredients

  • 1 lb. lean ground beef (I use 85/15)
  • 1 medium red or white onion, diced
  • 2 medium bell peppers, diced
  • 1 15-ounce cans of corn, drained and rinsed
  • 2 15-ounce cans of black beans, drained and rinsed
  • 2-3 10-ounce cans Ro-Tel diced tomatoes with chilies
  • 1-2 4 ounce cans of green chilies
  • 1 cup shredded Mexican-blend cheese
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

To Serve

  • 1-2 medium avocados, sliced
  • Shredded cheese
  • Plain Greek yogurt
  • Crushed tortilla chips
  • Jalapenos

Instructions

  • Cook the beef and vegetables. Add the diced onion and bell pepper to a large Dutch oven or pot over medium-high heat. Cook for 2–3 minutes. Add the ground beef and cook, breaking it apart with a wooden spoon, until mostly browned. Drain excess grease if needed.
  • Add the seasonings. Cook for about 30 seconds, until fragrant.
  • Add the remaining ingredients. Stir in the black beans, corn, Ro-Tel tomatoes and green chiles. Bring to a gentle simmer.
  • Simmer. Reduce the heat to medium-low and simmer for 10–15 minutes, stirring occasionally. Taste and adjust salt or spice as needed.
  • Serve. Ladle into bowls and top with shredded cheese, diced avocado and any additional toppings you love

Crockpot Option

  • Heat a pan on medium-high heat. Add the ground beef, diced onions, diced bell peppers to the pan with about a tablespoon of olive oil. Break apart the meat and cook until it's no longer pink - about 7-10 minutes. Add the mixture to a crockpot with the spices, canned beans, chilies, corn, and tomatoes. Cook on low for 4-6 hours! When ready to eat, add desired toppings.
