Ingredients
3cupsvanilla Greek yogurt; I used Oikos Triple Zero
2-3scoopsvanilla protein powderI highly recommend Optimum Nutrition Vanilla Ice Cream for this recipe. Nutrition information calculated with 2 scoops of protein powder.
3/4cupdiced strawberries
1/4cuprainbow sprinkles or whatever kind of sprinkles for the look you're going for
1/4cupwhite chocolate chips
1-2tablespoonshoney, optionaldepending on the sweetness of the protein powder used and your preference
1/4cupwater or more, if you prefer a thinner consistency to pour into the molds
Instructions
Add Greek yogurt, vanilla protein powder, and honey to a large bowl. Use a whisk to combine ingredients until smooth and well combined.
Fold in strawberries, sprinkles and white chocolate chips with a spatula.
Pour or spoon into the popsicle molds, tapping the mold gently on the counter to remove air pockets and ensure an even consistency. Or, you could use a piping bag or Zip-Loc Bag – spoon the mixture into a piping bag or a zip-top bag, snip off a corner, and squeeze it into the molds. This helps prevent spills. Can also thin the mixture out with water or milk, if preferred.
Refrigerate for at least 6 hours.
Remove from freezer. Carefully remove each popsicle from the mold, running the mold under hot water if needed. Enjoy!
Notes
Yogurt is thick, so it traps air easily when spooning it in. Try tapping the mold gently on the counter after each spoonful to help the mixture settle. Using a piping bag or freezer gallon bag can also help you get the yogurt in more smoothly without as many gaps. If the mixture is extra thick, whisking in a splash of milk or juice can make it easier to work with.
For a dairy-free option, select a higher protein plant-based yogurt like Kite Hill.
If you have leftover mixture, store in the fridge for 3-4 days and just refill the molds after you eat a popsicle.
Start with just one tablespoon of honey, taste test, and add more if needed.
If too sweet, you could add some lemon juice to cut some of that richness.
Fourth of July Popsicles: use red, white and blue sprinkles or Galaxy Sprinkles with stars. You could even sub the strawberries for blueberries!
