Birthday Cake Protein Popsicles {with Yogurt}

These birthday cake protein popsicles are a fun and healthy snack that could even double as dessert! They’re so creamy and decadent with the addition of sprinkles, chunks of strawberries and white chocolate chips. Each popsicle has 13 grams of protein, 3 grams of fiber and just 126 calories.

I originally bought a popsicle mold to make healthier popsicles for my kids. What I have come to find out is that they love to make popsicles but still much prefer the store-bought ones we have bought in the past.

Therefore, I now make popsicles for the moms! Of course, you totally could make these for your children with or without the protein powder. They’re super easy to make and so delicious! Perfect for cooling down in the summer or just as a high protein snack to help you reach a higher overall protein intake.

Why I Love This Recipe

  • Delicious and refreshing. If you follow this recipe to the T and use a really good tasting vanilla protein powder, these popsicles really do taste like birthday cake but in popsicle form.
  • Pretty easy to snack prep. This is a great recipe for high protein snack prep! It takes less than 10 minutes to prep and makes 10 servings that can be stored in the freezer for up to 3 months.
  • Healthy, high protein snack. The Greek yogurt + protein powder combination make these popsicles super creamy and high in protein (and fiber). You could even increase the protein by adding 3 scoops of protein powder (instead of 2). Or, omit the protein powder altogether for a little less protein.

Ingredients

  • Vanilla Greek Yogurt (3 cups). I used Oikos Triple Zero.
  • Vanilla Protein Powder (2-3 scoops). I highly recommend Optimum Nutrition Vanilla Ice Cream Protein Powder for this recipe.
  • Sprinkles (about 1/4 cup). Rainbow sprinkles are perfect for that “birthday cake” look but you could definitely get creative with different kinds of sprinkles! Think red, white and blue for Fourth of July.
  • Strawberries (about 3/4 cup), diced small.
  • White Chocolate Chips (1/4 cup).
  • Honey (1-2 tablespoons), optional – amount used dependent on how sweet your protein powder is and per your sweetness preference.
  • Water (1/4 cup), optional – if you want a thinner consistency to spoon into the molds.

Optional additions: hemp hearts, chia seeds, flaxseeds, vanilla extract or vanilla bean paste.

How to Make Birthday Cake Popsicles

These super creamy Greek yogurt popsicles with protein powder are such a fun way to increase protein intake and make such a tasty, refreshing treat!

This recipe makes 10-12 popsicles. I am using these silicone popsicle molds. There are many affordable molds on Amazon. Some protein powders are very sweet and you may need to use less honey, if so. If you love this recipe, give my Birthday Cake Cottage Cheese Bark a try as well!

Step-By-Step Directions

  1. Add Greek yogurt, vanilla protein powder, and honey to a large bowl. Use a whisk to combine ingredients until smooth and well combined.
  2. Fold in strawberries, sprinkles and white chocolate chips with a spatula.
  3. Pour or spoon into the popsicle molds, tapping the mold gently on the counter to remove air pockets and ensure an even consistency. Or, you could use a piping bag or Zip-Loc Bag – spoon the mixture into a piping bag or a zip-top bag, snip off a corner, and squeeze it into the molds. This helps prevent spills. You can also add water or milk to make the mixture thinner and easier to pour/spoon.
  4. Refrigerate for at least 6 hours.
  5. Remove from freezer. Carefully remove each popsicle from the mold, running the mold under hot water if needed. These popsicles taste best as they melt and become more creamy. Enjoy!

Separate each piece popsicle by parchment paper to prevent them from sticking together (optional). Store in the freezer for up to 3 months!

Variation Ideas & Tips for Success

  • For a dairy-free option, select a higher protein plant-based yogurt like Kite Hill.
  • If too sweet, you could add some lemon juice to cut some of that richness.
  • Start with just one tablespoon of honey, taste test, and add more if needed.
  • If you have leftover mixture, store in the fridge for 3-4 days and just refill the molds after you eat a popsicle.
  • Yogurt is thick, so it traps air easily when spooning it in. Try tapping the mold gently on the counter after each spoonful to help the mixture settle. Using a piping bag or freezer gallon bag can also help you get the yogurt in more smoothly without as many gaps. If the mixture is extra thick, whisking in a splash of milk or juice can make it easier to work with.
  • Have fun with different color sprinkles! For a Fourth of July version, sub the strawberries with blueberries or use red, white and blue colored sprinkles. There is also a galaxy mix with stars!
