For a more substantial meal, top with protein granola, extra fruit, and chopped walnuts.
Instructions
Add the frozen raspberries, cottage cheese, Cool Whip, vanilla protein powder, lemon juice, and 1 tablespoon of milk to a large bowl.
Using an immersion blender, you can blend the ingredients in less than 60 seconds. Alternatively, add all ingredients to a small food processor or high-speed blender. Blend until thick and creamy, stopping to scrape down the sides as needed.If the mixture is too thick to blend, add a tablespoon of milk. Try not to add too much liquid, or it will become more like a smoothie.
Serve immediately with graham cracker crumbs, granola, and/or a few extra berries on top if desired. See my topping recommendations if you're eating this as a well-balanced meal!

To freeze: Store in an airtight container in the freezer (for up to 3 months) but allow to thaw for 30-60 minutes in the fridge or at room temperature.
Make it dairy-free by using Coco Whips or any other dairy-free alternative and a plant-based cottage cheese.
