Frozen Berry Protein Whip

This frozen raspberry protein whip is thick, creamy, and sweet-tart with a soft-serve-like texture and a subtle cheesecake vibe from cottage cheese, vanilla protein powder, and a little Cool Whip. It is sort of like a cross between sorbet, ice cream and pudding.

Top with graham crackers and more raspberries or whatever toppings you prefer! It’s light enough for a snack, but easy to build into a bowl for breakfast or lunch.

Ingredients

Makes one serving and tastes best when it is consumed immediately.

  • 1/2 heaping cup raspberries. Sub with strawberries – see variations below.
  • 1/3 cup of cottage cheese. I used 2% Good Culture.
  • 1/2 scoop of vanilla protein powder. I used Optimum Nutrition Vanilla Ice Cream.
  • 1/4 cup of Cool Whip. Sub with Coco Whip for a dairy-free alternative.
  • 1-2 tablespoons lemon juice. Plus, zest if you prefer more lemon.
  • Pinch of salt.
  • 1-2 tablespoons of preferred milk, if needed. I did not need to add any milk!

Topping Ideas

  • Crushed graham crackers.
  • Dark chocolate.
  • Fresh raspberries.
  • If you want to eat this as more of a meal, use one scoop of protein powder and top with crushed granola (check label for a high protein + fiber version), chopped nuts and more raspberries!

Step-By-Step Directions

Thick, creamy and dessert-like, this cheesecake-y frozen whip is perfect to cool you down after a hot day. Ideal if you are someone who likes a treat after dinner. Even a light but substantial breakfast!

  1. Add the frozen raspberries, cottage cheese, Cool Whip, vanilla protein powder, lemon juice, and 1 tablespoon of milk to a large bowl. Using an immersion blender, you can blend the ingredients in less than 60 seconds. Alternatively, add all ingredients to a small food processor or high-speed blender. Blend until thick and creamy, stopping to scrape down the sides as needed.
  2. If the mixture is too thick to blend, add a tablespoon of milk. Try not to add too much liquid, or it will become more like a smoothie.
  3. Serve immediately with graham cracker crumbs, granola, and/or a few extra berries on top if desired. See my topping recommendations if you’re eating this as a well-balanced meal!

To Freeze

Yes, you can freeze! I have tested this twice. Here is what I found out. Store in an airtight container in the freezer (for up to 3 months) but allow to thaw for 30-60 minutes in the fridge or at room temperature.

It takes a long time to thaw – starting out pretty icy like sorbet and then getting creamy the longer it sits. I use snack size Pyrex glass containers and it was perfect for individual servings!

Fun Flavor Variations

  • Strawberry basil. Swap raspberries for strawberries and add 1-2 basil leaves.
  • Pineapple Tajín Protein Whip. Use frozen pineapple instead of raspberries. Use lime juice instead of lemon juice. Add a small pinch of Tajín on top.
  • Cherry Almond. Use cherries and add a dash of almond extract.
  • Peach cobbler. Frozen peaches and cinnamon!

Method

  1. Add the frozen raspberries, cottage cheese, Cool Whip, vanilla protein powder, lemon juice, and 1 tablespoon of milk to a large bowl.
