Add the cream cheese, Greek yogurt, sea salt, lime juice, lime zest, and powdered sugar to a large bowl. If using instant pudding mix for a thicker dip, add it here as well.
Whisk together until smooth and well-combined. You can also use an immersion blender for an extra smooth texture.
Gently fold in the Cool Whip until the dip is light and fluffy.Fold in white chocolate chips, if using. Transfer to a serving bowl and top with additional lime zest and toasted coconut, if desired.
Serve with graham crackers, vanilla wafers, pretzels, fruit, or your favorite dippers.
Store in an airtight container in the refrigerator for up to 4 days (3 is best). Give the dip a quick stir before serving if it releases any moisture. If using toasted coconut, add it right before serving so it stays crisp.
