In a large bowl, combine the Greek yogurt, protein powder and chia seeds. Whisk until smooth and well-combined.
Add the juice of one lemon and berries of your choice to a blender. Feel free to add more lemon for more tartness. Blend until smooth.
Pour the berry puree into the Greek yogurt mixture and gently combine with a spoon. Taste test - add more lemon or honey if needed. If you like chunks of fruit in your popsicles, sprinkle in some blueberries or chopped strawberries.
Distribute the lemon berry mixture into your popsicle molds.
Refrigerate for at least 4 hours or until the popsicles have set. Run some warm water over the popsicle molds for easy retrieval.
To store, wrap the popsicles in a non-stick material like parchment paper, plastic wrap, or wax paper. Place them in an airtight, resealable, freezer-safe bag or container. You can also layer the popsicles with wax paper or plastic wrap. This way, you can still use your popsicle mold to make frozen concoctions with your kids.
