I’ve been a bit obsessed with the lemon, berry and honey flavor combination lately. I bought these popsicle molds to make creations with my kids then thought – why not add these delicious flavors into a refreshing popsicle? I also found a protein powder that I actually like and was inspired to make them higher in protein.
Since these popsicles are made with Greek yogurt, they’re super creamy and not your typical fruit popsicle. The more they thaw the creamier they get! So next time you’re looking for a higher protein snack – reach for these popsicles instead!
Why You Should Try These Popsicles
Ingredients
Vanilla Greek Yogurt (3 cups): I highly recommend a vanilla or berry flavored yogurt – which helps to increase the protein content without a lot of protein powder!
Strawberries or Mixed Berries (about 2 cups): What is great about this recipe is that frozen or fresh berries can be used. I actually blended fresh strawberries to mix into the Greek yogurt mixture, then added in some frozen blueberries to have chunks of fruit as well.
Vanilla Protein Powder (2-3 scoops): Make sure you enjoy the taste of the protein powder you’re using – but the lemon and berry flavors really do a good job of masking that taste. Adjust the amount of protein powder based on your preferences! I have finally found a protein powder that I like (usually not a fan) and could barely taste it in this recipe!
Lemon (juice of one lemon, at least): If you really love the flavor of lemon, you may want to even add more. I feel like this is the key to a refreshing popsicle!
Chia Seeds (3-5 tablespoons): Why not make these popsicles even healthier with a little fiber and omega-3 fatty acids from the chia seeds?
Honey (optional): Drizzle some honey into the popsicle mixture to add a little sweetness. These popsicles are easily customizable.
How to Make Lemon Berry Protein Popsicles
Serving size will depend on the size of the popsicle molds. This recipe made about 11-12 small sized popsicles using silicone molds I found on Amazon. Your kids might even enjoy them! Or, at least enjoy making them with you.
Whisk Protein Powder and Greek Yogurt
In a large bowl, add the protein powder, chia seeds and Greek yogurt. Whisk until smooth and well-combined.
Make the Mixed Berry Puree
Add the juice of one lemon and berries of your choice to a blender. Feel free to add more lemon for more tartness. Blend until smooth.
Combine All Ingredients
Pour the berry puree into the bowl with the Greek yogurt mixture. Gently stir together until the berry mixture is spread out. Taste test – and add a drizzle of honey for more sweetness, if needed. If you like chunks of fruit in your popsicle, feel free to add in some blueberries or chopped strawberries (or raspberries).
Pour into Molds and Freeze for At Least 6 Hours
Distribute the lemon berry mixture into your popsicle mold. Try not to overfill (as seen above, in true moderately messy fashion). But hey – if you make a mess it makes no difference! They will still taste amazing.
Freeze and Enjoy!
Place in the freezer for at least 4 hours – or until the popsicles have set. Run some warm water on the silicone molds for easy popsicle retrieval. Store in the freezer for up to 3 months!
Wrap the popsicles in a non-stick material like parchment paper, plastic wrap, or wax paper. Then, place them in an airtight, resealable, freezer-safe bag or container. You can also layer the popsicles with wax paper or plastic wrap. This way, you can still use your popsicle mold to make frozen concoctions with your kids.

Tips for Success
Obviously, the more protein powder you add the higher in protein these popsicles will be. Use 2 lemons for more lemon flavor -and it helps to mask the taste of the protein powder!
Even without the addition of protein powder, these popsicles provide a nutritious summer treat and have a little bit of protein and fiber from the Greek yogurt and chia seeds. Add in some hemp hearts for a higher protein addition as well.
Vanilla extract would be a delicious addition to these popsicles for more vanilla flavor.
To make these popsicles dairy-free, sub the Greek yogurt with a high protein dairy-free yogurt like Kite Hill Plant-Based Yogurt (Greek Style).
Add a couple tablespoons of Jell-O cheesecake pudding mix for a lemon berry cheesecake popsicle (but this will make the popsicle mixture thicker).
