Pistachio Pudding Protein Fluff {High Protein}

This creamy Greek yogurt pistachio pudding fluff is the ultimate quick treat - perfect as a snack or a fun healthy (ish) appetizer. With just a handful of ingredients and 5 minutes of prep, you’ll have a fluffy, high-protein dip (or spoonable snack) ready to keep in the fridge. Enjoy it straight from the bowl, serve it with dippers, or set it out as a healthier crowd-pleasing appetizer! {Gluten-Free} Makes 6 1/2-cup servings!

Ingredients

  • 2 cups unflavored or vanilla Greek yogurt I used Oikos plain Greek yogurt
  • 1 3.4 ounce box of instant pistachio pudding mix can use sugar-free if preferred.
  • 1/2 cup preferred milk almond milk for lower calories or Fairlife milk for higher protein
  • 1 cup cool whip opt for lite for lower calories/less sugar
  • 1 scoop unflavored or vanilla flavored protein powder I used Unflavored Isopure Zero Carb Protein Powder.
  • Honey or preferred sweetener, optional.

Topping / Dippable Ideas

  • Crushed pistachios as a topping
  • Shaved dark chocolate as a topping
  • Mini chocolate chips
  • Mini marshmallows
  • Pretzels as a dipper
  • Graham crackers as a dipper
  • Strawberries as a dipper
  • Vanilla wafers as a dipper

Instructions

  • Add instant pudding mix, Greek yogurt, milk and protein powder to a large bowl.
  • Whisk together for about 60 seconds, smooth and well-combined with no lumps. Taste test and add honey or preferred sweetener based on your taste preferences.
  • Fold in the cool whip so it's light and fluffy.
  • Top with crushed pistachios and shaved dark chocolate. Add mini chocolate chips for some texture. Eat it as a dip with pretzels, strawberries or graham crackers. OR just spoon into a bowl and enjoy.
  • Store in an airtight containers for up to 3 days in the fridge. I recommend stirring well before eating if it has been in the fridge for a couple of days!

Notes

  • If preparing as an appetizer, this recipe can be made ahead - I recommend 12 hours before for best results. However, 24 hours is fine as well.
  • For a less "healthy" version, I recommend adding the entire cool whip container.

  • Milk can be omitted for a fluffier fluff! Protein powder can be omitted as well, I have not tested this, though.
