One of my biggest weaknesses? Snacking in bed. So, I enjoy a snack that tastes really good and is also healthy for me, too – and this is one of those recipes.

I love dipping pretzels and strawberries into this fluffy pistachio dip. It’s not super sweet with just a bit of tang from the Greek yogurt – and there is almost 14 grams of protein per serving.

This pistachio pudding fluff is very customizable: change the toppings, switch up the dippers, make it lower in calories, switch it up so it’s “less healthy”, add more protein powder to increase the protein content – the sky is the limit!

How to Make the Pistachio Fluff

Creamy, fluffy pistachio pudding fluff that is spoonable or dippable. The entire recipe makes six 1/2-cup servings and uses an entire box of instant pudding mix. If you’re making this as a snack for yourself, cut the recipe in half and store in the fridge for 2-3 days.

This recipe was tested with Oikos plain non-fat Greek yogurt, Kroger cool whip (not the lite version), Kroger pistachio pudding mix (not sugar-free), and Isopure Unflavored Zero Carb Protein Powder.

If making as an appetizer, it can be made about 24 hours in advance but for best results about 12 hours in advance.

Ingredients

  • Cool Whip (1 cup). Opt for the lite version if watching your sugar intake.
  • Plain non-fat Greek Yogurt (2 cups). Vanilla works, too!
  • Preferred milk (1/2 cup). I used Fairlife milk. Milk can be omitted if you prefer a fluffier fluff!
  • Pistachio Instant Pudding Mix (one 3.4 ounce box). Can opt for sugar-free if preferred!
  • Unflavored or vanilla protein powder (1 scoops or more). The protein powder can be omitted.
  • Honey or preferred sweetener, optional. If you prefer a sweeter taste, feel free to add!

Toppings / Dippers

  • Pretzels
  • Shaved chocolate as a topping or mini chocolate chips
  • Crushed pistachios, for a topping
  • Vanilla Wafers
  • Strawberries
  • Graham Crackers

Step-by-Step Instructions

  1. Add instant pudding mix, Greek yogurt, milk and protein powder to a large bowl.
  2. Whisk together for about 60 seconds, until the fluff is smooth and well-combined with no lumps.
  3. Gently fold the cool whip into the mixture so it’s light and fluffy.
  4. Taste test and add honey or preferred sweetener based on your taste preferences.
  5. Top with crushed pistachios and shaved dark chocolate. Add mini chocolate chips for some texture. Eat it as a dip with pretzels, strawberries or graham crackers. OR just spoon into a bowl and enjoy.
  6. If you prefer this pudding fluff less “healthy”, I recommend just adding the entire container of cool whip.

Store in an airtight containers for up to 3 days in the fridge. I recommend stirring well before eating if it has been in the fridge for a couple of days!

This is a great dip for an appetizer / dessert board! Easy to make and so delicious with a variety of dippers.

Tips for Success

  • Use cold milk – helps the pudding set faster and gives the fluff a thicker texture.
  • Don’t skip the Greek yogurt – it balances the sweetness, adds protein, and keeps the fluff creamy (not overly sweet).
  • Fold gently – when mixing in Cool Whip, fold instead of stirring hard to keep it light and fluffy.
  • Chill before serving – while it can be eaten right away, letting it sit in the fridge for 30–60 minutes makes it thicker and more “scoopable.”

Different Variation Ideas

This recipe is completely customizable and easy to mess around with! Add more scoops of protein powder, Greek yogurt, or cool whip.

Here are some suggestions:

  • Lower the sugar content by using sugar-free pudding mix, lite cool whip, and plain Greek yogurt. Read nutritional labels and compare different products.
  • I have not tested, but you could make this recipe dairy-free with a higher protein plant-based yogurt like Kite Hill and a dairy-free cool whip. Pistachio pudding mix is dairy-free.
  • This recipe is gluten-free as is just make sure the dippers are, too.
  • Increase the protein content by adding more protein powder.
  • Make it “less healthy” and the most delicious by increasing the cool whip, adding honey to sweeten it up, and/or using a sweeter protein powder.

Flavor Variations

Pistachio Cheesecake Fluff – use cheesecake-flavored protein powder and top with crushed graham crackers.

Chocolate Pistachio Fluff – swap in chocolate protein powder or fold in mini chocolate chips.

Tropical Pistachio Fluff – add coconut flakes and use coconut protein powder for a pina colada vibe.

Berry Pistachio Fluff – fold in fresh raspberries or strawberries for a sweet-tart contrast.

Frequently Asked Questions

Isn’t pistachio pudding mix full of “toxic” chemicals?

Instant pudding mix is an easy and convenient way to add taste and texture! It’s mostly sugar, modified starches for thickening, flavorings, and some food colorings or stabilizers. These are all FDA-approved ingredients considered safe to eat in the amounts found in foods.

That said, it is a highly processed product – it’s not very nutrient-dense and it does contain artificial additives. So while it’s fine to enjoy occasionally, it’s not something to rely on for nutrition.

Food additives like the ones in Jell-O pudding mix have been evaluated repeatedly by the FDA (Food and Drug Administration), EFSA (European Food Safety Authority), and other global food safety agencies. For an additive to be approved, it must undergo toxicology studies to determine a “no observed adverse effect level” (NOAEL).

Now, remember: the “dose” makes the poison. Therefore, there might be one study out there that says one of these additives “may be a carcinogen” but 1) there is not enough research or even a specific dose in which this could be the case, and 2) the other studies in which this additive has been used have found no harm.

So while I wouldn’t recommend pudding mix as an everyday health food, there’s strong scientific consensus that the additives in small amounts are not dangerous. I would never recommend a food if I truly believed it would cause significant harm to other people.

Can I make this ahead of time?

Yes! It keeps well in the fridge for 3–4 days in an airtight container. Just give it a quick stir before serving.

Can I freeze pistachio fluff?

Freezing isn’t recommended—it changes the texture once thawed.
