S'mores Dip with Cottage Cheese

A super fun and delicious s'mores dip for the summer or even holiday and winter get-togethers! It's like a combination of cheesecake and s'mores. The salty cottage cheese complements the sweet flavors well and is the perfect sub for cream cheese! No one will ever know the difference.

Ingredients

  • 16 ounces Good Culture Low Fat 2% Cottage Cheese
  • 7 ounces marshmallow fluff/creme
  • 1 1/2 cups cool whip, softened
  • 1 tablespoon vanilla extract
  • 1 tablespoon maple syrup
  • Pinch of salt, optional

To Serve

  • Mini chocolate chips
  • Mini marshmallows
  • Graham crackers, for garnish and to dip
  • Strawberries, for dipping

Instructions

  • Add the cottage cheese to a blender. Blend until smooth and creamy.
  • Combine whipped cottage cheese, cool whip, marshmallow fluff, maple syrup, vanilla extract and a pinch of salt (optional) to a large mixing bowl.
  • Using a hand mixer, beat on low or medium until all the ingredients are well-combined with minimal or no lumps. Pour the mixture into a large bowl or 9.5 inch circular glass dish.
  • Add mini chocolate chips (I used about 1 cup) and combine. Top the dip with crushed graham crackers and mini marshmallows when ready to serve (max 3 hours before serving to prevent sogginess). Serve with sheets of graham crackers and strawberries. Store in the fridge in an airtight container for up to 4 days!

Notes

  • You can always taste test by dipping a graham cracker into the dip and adjusting with more marshmallow, maple syrup or cool whip.
  • To prep ahead: Complete steps 1-4 and store in the fridge for up to 3 days. Mix in the chocolate chips and add the toppings and it's ready to serve!
  • Other serving ideas: shortbread cookies, vanilla wafers, pretzel rods, pretzel sticks, apple slices, banana slices, brownie bites, biscotti, chocolate chip cookies
