Ingredients
2cupsGreek yogurt, plain vanilla, coconut, or pineapple flavors would work as well
Hemp hearts, chopped nuts, or granola - optionalfor crunch
Instructions
Prep the fruit: In a bowl, toss the diced mango and pineapple with a squeeze of fresh lime juice and 1 tsp of Tajín. Let sit for 5–10 minutes to allow the flavors to combine.
.Layer the parfaits: In 2 glasses or jars, spoon a layer of Greek yogurt, followed by a drizzle of honey, and a layer of Tajín-spiced fruit. Repeat layers as desired.If you are preparing these parfaits as a snack, add 1/2 cup of Greek yogurt as the base. Then, top with fruit and drizzle with honey.
Top and garnish: Finish with a drizzle of honey, a pinch more Tajín on top (optional), and granola, chopped nuts, or hemp hearts for texture. Again, optional - easily customize however you prefer.
Serve immediately or store in an airtight container for up to 4 days.
Notes
Use a Greek yogurt with the probiotic strains listed on the container, like Chobani or Oikos.
To increase the protein, whisk 1-2 scoops of unflavored or vanilla protein powder into the yogurt.
For a dairy-free option, select a higher protein plant-based yogurt like Kite Hill.
Top with whipped cream or coconut cream for the ultimate sweet and tropical bite!
