These yogurt parfaits were inspired by my recent trip to Coldstone. They have this new concoction with mango ice cream, chunks of pineapple, and Tajín – which is a chile lime Mexican seasoning that can be found at most grocery stores. The combination was so fun and delicious – I had to recreate it!

- 2 cups Greek yogurt (plain or vanilla). I used plain Greek yogurt, however, you could use whatever you prefer – like coconut, vanilla, or pineapple! This will add more sugar, though – you can adjust with less honey if you prefer!
- 1 medium or large ripe mango, diced into cubes.
- 1 cup diced fresh pineapple. Sub with pineapple tidbits, strained without the juice, as a shortcut.
- The juice of 1/2 of a lime.
- 1 tsp Tajín seasoning (or more to taste).
- Honey or agave syrup, to drizzle (optional). I used about 1 1/2 tablespoons to complement the salt/spice.
- 1/2 cup granola (choose a crunchy one with coconut or honey for extra flair) or hemp hearts, optional. Chopped nuts would be another option as well.

This recipe makes two larger servings for a well-balanced meal or four smaller servings for a snack with about 1/2 cup of yogurt.

- Prep the fruit: In a bowl, toss the diced mango and pineapple with a squeeze of fresh lime juice and 1 tsp of Tajín. Let sit for 5–10 minutes to allow the flavors to combine.
- Layer the parfaits: In 2 glasses or jars, spoon a layer of Greek yogurt, followed by a drizzle of honey, and a layer of Tajín-spiced fruit. Repeat layers as desired.
- Top and garnish: Finish with a drizzle of honey, a pinch more Tajín on top (optional), and granola, chopped nuts, or hemp hearts for texture. Again, optional – easily customize however you prefer.
- Serve immediately or store in an airtight container for up to 4 days.
