We all have the best of intentions when we go into making our grocery list but picky kids and busy schedules make it really difficult to plan perfectly. I absolutely hate wasting food, therefore, I use these clean out the fridge meal ideas to take advantage of using up sauces, dressings, spoiled produce, cheese or expired pantry items!

Of course, in a perfect world, we would “only buy ingredients that we know we will use” or buy produce twice a week. But, we’ve all been there: you open your fridge and find a sad-looking zucchini, half an onion, and a random bag of spinach that’s on its last leg.
I am all about putting together a meal with random odds and ends instead of tossing food in the trash! You can turn it into something surprisingly delicious with a few “fridge clean out” ideas.
It’s kind of like you’re a chef on Chopped and you have to come up with a dish based on ingredients on hand.
These ideas aren’t really recipes – they’re flexible meal templates that work with whatever you already have on hand. Think of them as your go-to strategies for stretching groceries, reducing food waste, and still getting a healthy dinner on the table.
Why These Meals Work for Busy Moms
Even among people who think they’re good at meal planning, research shows the average American household wastes about 30–40% of the food they buy. A lot of that is from produce spoiling in the fridge or leftovers going uneaten.
Some people do meal plan tightly and waste less, but even they may run into:
- Last-minute schedule changes (takeout instead of cooking).
- Kids suddenly deciding they “don’t like” a food anymore.
- Buying too much produce because it looks good at the store.
- Forgetting what’s already at home.
Helpful Tips
- Roast a big tray of “random veggies” to mix into bowls, wraps, pasta, or eggs.
- Keep shredded cheese, tortillas, rice and pasta stocked – they turn almost anything into a meal.
- Label a fridge bin “Eat Me First” for items that need to be used soon.
- Plan one night a week as Fridge Clean Out Night – a built-in way to waste less and save money.
- Keep some pantry staples on hand to “complete” the meal, like corn, beans, chilies, frozen edamame, etc.
Meal Ideas
Dinner doesn’t have to mean following a strict recipe. With these easy “fridge clean out” meal ideas, you can save money, reduce food waste, and get creative in the kitchen – all while feeding your family a healthy dinner.

I like to leave one or two nights of the week as a “no plan” night where I use up some items that are about to be thrown away!
1. Stir-Fries
Stir-fries are a blank slate with essentially a lot of vegetables, a lean protein source, and a grain. Throw produce that is going to spoil in a pan and use up sauces that are about to expire.
Perfect way to:
- use up easy to stir fry veggies like zucchini, mushrooms, carrots, pepper, onions, etc.
- get rid of sauces that are going to expire by adding flavor to the stir-fry.
- save leftovers for an easy lunch the next day.
Even making a homemade veggie fried rice is one of the easiest, most delicious one-pan meals!

2. Throw Into a Frittata or Egg Muffins
A frittata, omelet or egg muffins are a great way to use up some veggies whether for breakfast or breakfast for dinner. Whisk eggs, add in whatever veggies/cheese/protein you have, and bake or cook on the stovetop.
This is especially great for spinach, mushrooms, zucchini or tomatoes.

3. Power Bowls
Oh, the power bowl: what I like to call the queen of throw together meals. Each bowl should contain a high quality protein, carbohydrate, and at least one vegetable (or fruit), the basics of a well-balanced meal.
You can then decide what type of bowl you’re craving for that night. It could be Mexican. It could be Italian. What about Mediterranean? The options are endless.
How you choose to cook your power bowl depends on your preference or your mood. Feeling lazy? Throw everything on a sheet pan and pair with a base.
Air fry the chicken then chop the rest of the veggies and eat them raw – like a quinoa salad. There are so many variations (read 28 Protein Bowls for more ideas).
Two recipes I turn to time and time again: Custimizable Chicken Fajita Bowl or Shrimp Bowl (shown below) Both use frozen or canned staples that you might already have so that these meals come together easily.
For fresh vegetables like cucumbers, bell peppers, tomatoes, try a Mediterranean-inspired grain bowl with a simple red wine vinegar and olive oil dressing.

If you have plain Greek yogurt that is about to expire, add it to your dinner to increase protein content. Use it as a sub for sour cream in a Mexican inspired meal or make it into a sauce – like this Greek Chicken Protein Bowls with Garlic Yogurt, shown below.

4. Clean Out the Fridge Pasta
Cook pasta, toss with olive oil or jarred sauce. This is another good night to do sheet pan veggies. I also love to do this with orzo and cook everything in one pan. You really just can’t go wrong.
Great for broccoli, mushrooms, tomatoes (can throw them in with sauce and let simmer), onions, peppers, spinach, zucchini, cauliflower, squash – I mean, basically anything.

5. Soups or Stews
When in doubt, make soup! Almost any combination of veggies, grains, and proteins can come together in a comforting pot of soup. Toss almost any veggie + broth + beans/protein in a pot. It’s almost impossible to mess it up!
Especially great for carrots, celery, greens, leftover chicken, kale, spinach, and wrinkly potatoes.
Some veggies can even be blended into the soup for those really tired veggies.

Quesadillas and tacos are always a great way to get rid of some leftover produce, cheese, and sauces.
